  • 2 pounds Elbow Macaroni Noodles
  • 4 tablespoons Butter
  • four tablespoons Flour
  • 4 cups Half and One-half or 4 cups Whole Milk
  • i teaspoon Salt
  • i teaspoon Paprika
  • one/2 teaspoon freshly ground Black Pepper to taste
  • 4 cups shredded Monterey Jack Cheese
  • 2 cups fine shredded Colby Jack Cheese
  • 1/4 cup fresh Parsley chopped, to garnish
  • Prepare pasta according to parcel directions just to al dente. Do non overcook. Bleed. Set aside.

  • Place a sauce pan over medium heat.

  • Add butter to the pan. Cook until melted and hot, but not browned.

  • Add flour. Whisk to make a roux. Whisk until the butter mixture starts to boil and bubble. Cook for some other infinitesimal until it starts to lightly brown.

  • Slowly whisk in cream. Go along to whisk and melt until sauce starts to thicken up.

  • Add salt, pepper and paprika. Stir.

  • Add together Monterey Jack cheese. Whisk until the cheese is melted. The sauce will still be a little runny.

  • Pour most 1/2 cup of the cheese sauce into the bottom of a bowl.

  • Add about 1 loving cup cooked noodles over the sauce.

  • Top this with about 1/2 cup of the shredded Colby Jack cheese.

  • Sprinkle with fresh parsley for color.

  • Serve hot and mix before eating.
